What's "in between" is increasingly available and tantalising to the adventuresome chef, and this book is the roadmap to adventure by way of Chanterelles, Shaggy Manes, Boletes, and my personal favorites Volvariella Volvacea, also known as Straw Mushrooms, the little dancing mushrooms in Walt Disney's Fantasia. Great book with very nice illustrations and typesetting in two colors, rather elegant.
