Don't let the word "Vegetarian" scare you off. I am not one (although I respect their goals). This is perhaps the greatest "Vegetable" cookbook ever. The great photography alone will pull you into the pages of the very well-written recipes. And who's to care if you want to add a couple hunks of beef to some of the stews or other dishes? This book has become one of our most used, all-around great cookbooks...get one before they're all gone!

It's easy for vegetarians, especially those who are relatively inexperienced cooks, to get into a rut and run out of meal ideas. Well, fear not, herbivores: this wonderful cookbook has come to your rescue! The recipes in here are delicious, hearty, and healthy, with a special emphasis (it seems) on comfort food. Special raves are in order for the Vegetable Korma (a yellow curry), the variety of easy-to-make gourmet pizzas, and the heavenly Sweet & Sour Mixed Bean Hot Pot (I think it's the sauce that really does it). Many of the recipes show how to make vegetarian versions of dishes traditionally made with meat, using substitutes like eggplant to achieve that meaty quality you might crave. Almost as scrumptious as the recipes themselves are the glossy, colorful pictures, which make this almost as much a coffee table book as a cookbook. I almost want to rip out the pages and eat them. Even if you're not a vegetarian and are simply looking to eat more healthfully--and these recipes prove that one never has to sacrifice great taste for health--you will enjoy sinking your teeth into this book.

I've been a vegetarian for over 10 years, but my husband is not. This book is great even for the non-vegetarian. There are great pictures, easy instructions, and very unique recipes I haven't seen anywhere else. There aren't just pictures of the end result, but there are pictures of the process also (which is where I often get confused while cooking), so you can be an inexperienced chef, but still create gourmet meals. You make pretty much everything from scratch, which is so healthy and it's also a lot of fun. If you buy one recipe book, this should be it.

This book gets more use than any other cookbook in our extensive collection, and we aren't even vegetarians, we just wanted to eat healthier. As a matter of fact, I'm making the Leek Souffle tonight, and I used the hummus recipe for a party.The photographs make the food look so good that you're eager to try out the recipes, which are all fairly easy to make. The ingredients are fairly simple and easy to find at the grocery store.So many of these recipes have become regulars on our menus. The baked eggs with leeks are a great lunch or breakfast, and I've made it so often, I don't even need to look at the book anymore. The vegetable pilau is a favorite, too. We've even used tabs on this book so we can hit our favorites easily (we have about 12 tabs in the book so far).If you buy no other cookbook, buy this one. I can't believe how impressed we are with this book!!!

I borrowed this from my public library because I wanted somenew and exciting vegetarian recipes, and I was not disappointed. The pictures are outstanding, showing not only the finished dish, but also the steps of preparation. After trying a sampling of recipes, I have decided it is a "MUST HAVE". ... The recipes are colorful, loaded with wonderful vegetables, artfully prepared yet doable by those of us who have not had gourmet training and just want to feed our families.
