One of my top 2 favorites!

We are a 1/2 vegetarian, 1/2 carnivore family. This cookbook is absolutely wonderful. I love just about every recipe in here and what some would complain about is what I find makes this my favorite cookbook. Yes, it uses some unusual combinations, but they work wonderfully. Yes, it uses a lot of store bought pre-packaged ingredients and I LOVE that convenience. I run a business, homeschool my diabetic son, keep a household and a family. I don't have time to grab 20 ingredients to make a simple meal. So many vegetarian cookbooks overcomplicate eating healthy. They want everything freshly bought and cut, squeeze, chopped, blended, pureed... This is a cookbook for the rest of us that don't have the time or desire to do all that to create a healthy meal. I am a vegetarian, but I dislike that so many vegetarian recipes are just a bunch of vegetables with seasonings. This one is not centered on vegetables. Yes, it has them in there, but they are not the main ingredient. Most of the recipes are also right at 250-350 calories, which is a healthy meal. There are eggs and dairy products in a lot of these recipes, so they would not appeal to Vegans. My carnivores in the family really appreciate the meat alternatives, as now they are getting great meals that they actually like eating. Now I get to choose healthier meat for them, if meat can be considered healthy in any way, but this way I get to choose less fat items and I use it sparingly, so they don't feel deprived and I feel like I am still getting them to cut back on it. I own close to a hundred vegetarian cookbooks and this is one of my 2 favorites. The other is the 5 ingredient vegetarian cookbook. If you want convenience you want these 2 cookbooks in your kitchen!

Excellent, Excellent book, YUMMY recipes!

FanTAStic book - I'd recommend it to anyone, and even buy it & give it as a gift! I got it from my library several times, and ended up copying out some recipes. My family loves them, and they're nice additions to our menu. A very worthwhile book!

Surprised there wasn't a book like this sooner!

This book is absolutely perfect for my family. My family is one of those where only half the members don't eat meat. When I come home from work, sometimes I just can't get myself psyched up to cook one meal, let alone two! This book helps me cook for the whole family with minimum fuss. All of the meals are rather quick, and there aren't really any ingredients that would be hard to find in your local grocery store. You just begin cooking up one of the meals for your family and then split it into two pots or pans, just adding the meat to one. In many of the recipes, the meat isn't added until toward the end of the cooking process. The only thing this book is missing are pictures--color pictures in a cookbook are always appreciated.
