With its simple ingredients and concise writing, this cookbook has helped me get amazingly aromatic and flavorable results from ordinary vegetables. The proportions are spot-on, giving me confidence that I never have to second-guess Budwig's judgement. Although I have made at least a third of the recipes in this book, it is one that I still constantly turn to for new ideas on how to get impressive results when entertaining.I bought this book in London in 1994 and am delighted that it will be soon available so that I can give it as a gift to friends in the US.
