Don't get me wrong..... I know the difference between assembly-line bleached bread and home made. Man bleaches bread because he wants to have as much control over the product as possible. You can walk into a grocery store in Portland Maine and pick up a loaf of big-boy bread, and you will find the same exact loaf in a grocery store in Fresno, CA.
