This Book Really Delivers

I'll admit that I had to buy my shelled hempnuts (organic) online...but hemp products are slowly becoming more available. In fact, recently, I have been finding hempnut milk on the shelves at nearby health food stores, and Nature's Path has some cereals with hempnuts in them. I was able to find hemp oil at the store, and you can grind your hempnuts into hempnut butter pretty easily with a food processor. It has been a joy reading through the recipes in this book and trying a few, all with great results. My favorite banana bread recipe for years, from Soy of Cooking, was replaced by the recipe for Hempnut Banana Bread in this work. The Baklava is phenomenal, with the most fragrant syrup base I have ever smelled or tasted! And the Brownies were so unique - crunchy on the outside but soft on the inside. I can't wait to try the Roasted Sweet Potatoes with Apricots and Curried Hempseed. You'll find a wide range of recipes in this book, including familiar items like Hempnut Burgers and Waffles, but you'll also find unique dishes that combine extraordinary ingredients, like the Dandelion Green Quiche and Scallion-Hempseed Mini-Muffins. I would recommend this cookbook to anyone who would love to incorporate more healthy omega 3s into their diet, all while enjoying delicious, hearty creations!

The Hempnut Health and Cookbook details hempseed's history, its exceptional nutritional value, its medicinal properties and also briefly mentions some of hemp's other uses other than as a foodstuff. Hempnut is essentially shelled hempseed and is possibly the most nutritious plant food on earth. It can be used in many recipes as a replacement for nuts, soy products, grains or even eggs. The Hempnut Health and Cookbook contains 116 easily-prepared, mainly vegetarian recipes. About three quarters of which are either vegan or could be made vegan fairly easily by substituting maple syrup for honey and by replacing the dairy products with soya milk, soya yogurt and vegan cheese. The remaining recipes contain larger amounts of eggs and honey and would be more difficult to convert, especially for the new vegan. It does seem a shame though that we have to convert any of the recipes when the authors are themselves vegan! It's an American book, so oven temperatures are given in degrees F and ingredients are measured in cups.
