Extremely informative, chock full of color photos & details. The first part of the book goes into detail about common ingredients used in the book, as well as in any other vegetarian cookbook, such as ghee, or corn oil or buckwheat, spices like tumeric, etc. Also includes a table of cooking time for vegetables, as well as different ways to avoid additives & make substitutions in recipes (like if you are on a gluten-free diet) as well as common cooking techniques like making your own dried fruit or thickened yogurt. As for the recipes, each one is listed with the calorie content, vitamins (if any) fat, etc. I would say though, that you need a little bit of time to make most of the main dishes & casseroles, but it is delicious, though not the most delicious I've tried compared to other cookbooks.
