Coming from England, it's somewhat tricky to find good Cajun and Creole food let alone cookbooks this side of the Atlantic Ocean. Having first been introduced to Creole food at Womad, and then completely overawed by the depth of these cuisines at The Commander's Palace, I've been trying to find a good and usable creole cookbook for years, and this it! This book though is amazing! Low-fat recipes that are easy to follow, and taste simply brilliant. Delicious Gumbo! Startlingly good Jamabalaya! What shall I try next? Happy Eating! ...
