George Hirsch is know for grilling. This is not a book about grilling. This is a great book about the basics. Information on different types of heat (dry, moist), different products (how to indentify freshness and quaility), and the use of ingedients is wonderful and easy to read. The recipes are diverse and the directions are straight forward. Great resource for the beginning and experienced cook.
