I gave this 5 stars because I am still using this book. I purchased this book in the late 80's. I remember how time consuming it was to make it all from scratch but now there is instant wheat gluten flour which cuts out alot of time. With the recipes in this book, the finished prduct really does taste like the "real" meat according to my Non-vegetarian family members. I am still using this book! The poor thing is tattered and torn but still usable. I think the only disadvantage is that it needs to be updated to include the instant gluten flour. But, it is real easy to bypass the making of it from the raw stuff. Recipies include chowders, chicken, sausage (all substitutes) and recipies for regular menus as if you were cooking with "real" meat. Even steak and meatloaf! Again, great book. Great for meat eaters and vegetarians!
