Grandma's Comfort Food Made Healthy (A Healthy Exchanges Cookbook)

I love this cookbook! Everything turns out truly delicious and with so much ease. All of the recipes sound so homey and delicious and require no special trips to fancy grocery stores - I usually have all the ingredients on hand at home. The "Cheesy Macaroni & Tomatoes" casserole is so rich and you get huge portions - buy this book for this recipe alone and you will be happy. (My husband hates tomatoes and he adores this recipe - it is now one of my favorite recipes.) All of these recipes are high in flavor, low in all the bad things (calories, fat, sodium) and high in all of the good things (calcium, vitamins, protein, etc.) These do no taste like diet foods at all. I have three of Lund's books and this is my favorite so far (although I can't wait to try her new Desserts Every Night Cookbook). I highly recommend purchasing this book - there are just so many wonderful recipes
