A must have to move beyond trial and error. Science works!

Leon has taken the mystery out of many of the seemingly "complex" problems and this books gives you a new way to break the mold in your traditional food science driven world. Flavor chemists have the GC, but depend on the nose. Chem E's need this book, a must have for every shelve.
