A massive collection of great seafood recipes...grilled and smoked

I purchased a few cookbooks on grilling seafood in order to add some tasty and healthy dishes to our diet. I'd have to say this is very extensive...lots of recipes and the directions are easy to follow, turn out well, and have no hard-to-find ingredients. Here are some samples of dishes: tarragon infused smoked sea bass with tropical salsa grilled seafood paella zesty lemon basted trout chipotle grilled tilapia thai grilled tilapia provencal grilled shrimp and pasta gratin warm smoked mussel, potato, and spinach salad smoked haddock risotto with leek and fennel grilled oysters in pesto grilled lobster papaya quesadillas with pineapple cream pernod-buttered lobster tails grilled yellowtail with mandarin orange and water chestnut relish smoked oyster bisque linquini with smoked clams and plum tomatoes smoked whitefish blinis with herbed sour cream foil packet flounder with artichoke sauce ...and tons more. though many of the dishes are quite gourmet tasting, they are actually recipes with just a few steps that anyone can easily follow. The book is 400 pages so it's an extensive collection, regardless of your taste preferances. Should you want to go more simply and just grill any fish you have on hand and, instead, pick a great sauce or seasoning to go on it, there is a good list of recipes for those as well. there are also a few recipes that are side dishes that just go well wiht grilled fish, such as coconut rice. for the smoked fish, it gives suggestions of the best kind of wood to use for each dish. Many recipes not only give you the recipe ingredients but also suggestions for other seafood you can use in place of the listed fish in the recipe that work equally well. For example, the Amaretto-basted walleye recipe notes you can use, instead: catfish, monkfish, orange roughy or trout. Because of this, you get more bang for your buck as far as number of recipes. We've found the recipes to turn out well and be straightforward and very tasty and with over 300 recipes you are bound to find something for any grilled seafood night. only negative I can think of: I would prefer if the recipes listed nutritional info such as calories. This may not matter to others, but some who are incorporating more seafood into their diet may be health-wise so it would be a nice addition. Also, there are no photographs. We bought 'the big green egg" as our grill and it is both a grill and a smoker too so we found this cookbook to be a good compliment to it. However, even if you have just a grill or just a smoker, I think you'll find enough recipes to make the book worthwhile in my opinion.

Haven't has a miss yet!

I've had this book for a year now and have made 15 recipes from the book. Not one of them has been anything less that stellar. This has become my "go to" seafood book. Favorites include Grilled Scallops with Pancetta and Basil Aioli, Grilled Rosemary Trout, Cedar planked Char and Zesty Lemon Trout. These have all been repeated. I only took a star away because I like cookbooks with pictures. I also wish sustainability would have been addressed but that's just me. There are some recipes for fish like Orange Roughy which are on the "avoid" list. Please check Seafood Watch at [...] before selecting your fish.

Excellent book!

Many grilling and smoking books give seafood only passing attention; not this book. Recipes are excellent, and while they are much more adventurous than what is typically found in grilling and smoking books, they are still user friendly in both taste and ingredients. This is one book I'll keep on my "most used" shelf for some time to come.

What A Thorough Work On Grilling a Fish/Shellfish!

These two ladies can BBQ! They have demonstrated that in contests, and here they demonstrate that in a marvelous, complete (nearly 400 pages) compendium on grilling/smoking seafood!It's all here, recipes, helps, side dishes, marinades and sauces, how to purchase, sources, etc. Also included are neat, useful sidebard discussions, e.g. 10 Tips and Techniques for Great Planked Fish and Shellfish, Every Time." One can see that these authors know what they're writing about, and they provide excellent substituions, instructions, serving ideas, and so on.I'm looking forward this grilling season to dig into such as: Lemon-Lime Monkfish, Grilled Lobster-Papya Guesadillas with Pineapple Cream, Grilled Sea Scallops with Pancetta and Bail Aioli, Beer-Brined Smoked Swordfish, and what is fast becoming a favorite: Grilled Lobster Parfait with Brandied Tomato Cream.What healthier food is there than seafood? Here, creatively, refershingly offered in over 300 Foolproof ideas for your enjoyment. This is a keeper!
