Eyeshield 21 isn't the best sports manga out there--it's the best manga that I've ever, ever, read in my three or four year career as a manga fan. I consider Eyeshield 21 to be the best sports manga I've ever read (even better than Prince of Tennis). Eyeshield 21 has a great cast of characters with very different personalities and skills, and yet they are all connected by their passion for the game of football (even if some characters don't realize yet that they are falling in love with the sport).
